Since Grace has been doing well when I sneak her a little tomato here and there, and since I am no longer eating dairy, I decided that it's time Grace and I had ourselves a special pizza.
I decided to make a simple pizza crust recipe using spelt flour. I mixed. I kneaded. I let is rise a couple of times. I added more flour. I didn't know what the hell I was doing. I then rolled it out on the pizza stone, added some sauce (from a jar, I didn't make my own), some Basil-Tofu Riccota from Vegan with a Vengeance that I made for a casserole yesterday (which flopped horribly), mushrooms, onions and green pepper. I had shredded some Follow Your Heart vegan cheese and I sprinkled that on top, and threw it in the oven.
The "cheese" was supposed to melt, but it didn't really. Maybe I should have cooked it longer? I have no idea. It looked so beautiful! And it was so yummy! The crust tasted so good...I think even if Grace outgrows her wheat allergy I will still use spelt flour for everything. I think the Basil-Tofu Riccota added a very nice touch to it, even though Grace didn't like the little pieces of basil. I scarfed down three pieces of this pizza in no time. I felt full, but not grossly full like when eating a greasy cheesy pizza. I felt great. And glad that my experiment turned out. They don't always...I only blog about them when they do!
I always listen to my mp3 player on my under-the-counter radio when I'm cooking or working in the kitchen, and I have been listening to my mix CDs put on random. I never used to like random, but it has been a lot of fun having a great song surprise me. Except when it gets stuck on a few songs and plays them over and over. "Detachable Penis" came on three times while I made the pizza. Not sure why I have that song on there...
Anyway, I was sitting outside eating and enjoying the mosquitoes biting and the cool breeze and that summertime feeling when this song came on and I was so filled with happyhappyhappy that I could have burst. Grace danced, wiggling her little butt with pizza sauce all over her face and it was sublime.
